Slowly heat it again and knead to get mozzarella. You should not use pasteurized milk. Materials required for preparing Mozzarella cheese are a gallon of milk, half a bowl of water, six tablespoons of salt (free from iodine), a teaspoon of rennet, one and a half teaspoons of citric acid, and ice. You would also require a thermometer. Begin by dissolving the citric acid in one of a cup of water. You can add rennet with water in another container. Pour the milk in a stainless steel pot and slowly add citric acid and blend slowly for one minute. Keep the stove in a medium flame and slowly heat the milk until it reaches 212 degrees Celsius. Remove the milk pot from the heat and slowly add rennet and blend it. Now, put the lid and allow it to settle for 10 minutes.
After this, heat the blend again at 105 degrees Celsius and make vertical cuts in the blend. Now, remove the pot from the heat and continue the mixing process for two minutes. Proceed by putting the curd in a stainless steel strainer. Post this you can heat the whey at 175 degrees Celsius. Now place the steel strainer in the whey for a while and remove the curd and press them with hand wearing a glove. Lastly, stretch and fold the curd to get yummy mozzarella cheese.
